After the summer, we all look to get back on track toward our health goals. For some of us, that means hitting the gym a couple times a week or trying to be a vegetarian Monday through Friday. I have a hard time feeling full from just the leaves (aka salads!) On my own, so that’s when I turn to more hearty veggies like eggplant to keep me feeling full throughout the day.
