Cheat Sheet Sausage, Peppers and Onions with Polenta

  • 1 pound (455 g)
    Italian sausage left over
  • 1
    Red onion, sliced
  • 1
    Red pepper, sliced
  • 1
    Yellow pepper, sliced
  • 4 tablespoons (60 ml)
    Extra virgin olive oil
  • 1 Teaspoon
    spiced garlic salt
  • Eight 1/2 inch (12mm) slices
    Polenta (about 8 ounces / 225 g)
  • Kosher salt and ground black pepper
  • 3 tbsp
    Grated Parmesan cheese

Cooking instructions

  1. Preheat the oven to 450 ° F (230 ° C).

  2. Place the sausage, onion, and peppers on a rimmed baking sheet. Drizzle with 2 tablespoons of oil and sprinkle with the garlic salt, stirring lightly with the tongs to coat. Bake for 15 minutes.

  3. Meanwhile, season the slices of polenta with the remaining 2 tablespoons of oil and a pinch of salt and pepper. Remove the pan from the oven and turn the sausage and vegetables. Add the polenta and put it back in the oven for another 15 minutes. Flip it over again. Turn on the oven to grill. Sprinkle everything with the cheese and cook for 2 to 3 minutes, until everything is brown and slightly charred.
