Brendan Eades, former head chef of the world’s first zero-waste restaurant silo, he will bring his environmental expertise to open the Warehouse public restaurant at the Conduit members club and we couldn’t think of a better man for the job. The Conduit 2.0 (the original site was on Mayfair but has recently been relocated) is located in a Grade II classified space that was previously the warehouse that supplied the original Covent Garden fruit and vegetable market and aims to be a home for a community passionate about driving positive social change. In keeping with this environmentally conscious ethos, the warehouse will purchase its ingredients from carefully selected suppliers, who will all have sustainability at the heart of what they do.

The Warehouse menu will be centered around bold flavors, seasonality and sustainability, with dishes including celeriac salad, pears, hazelnuts and lovage; cod cheeks with stock tartar sauce; venison with smoked beets, salted licorice and vegetables; and chocolate, quince and candied grains. Joining Brendan will be the famous mixologist, Walter Pintus (formerly Mandrake & The Ritz), who will use fresh seasonal fruit or syrups, homemade cordials, vinegars and pickles to create simple and fresh cocktails all year round.
